Same! I’ve always considered time travel to be a “plot cheat code” because it allows writers to do whatever they want. This works out ok sometimes but other times it just makes for bizarre stories that defy belief. This would definitely be the latter kind!
I enjoy ST largely because it’s believable (in a broad strokes ignore the details kind of way) so far-fetched stories don’t do it for me as much. Time travel is firmly in “never gonna happen” territory.

I enjoyed the episode but agree with most of your points, especially the flashbacks. If the events had happened earlier in the episode they might have been understandable but they had just happened! Spock’s little joke was pretty out of character as well.
I thought trans people were a good fit for the metaphor, given the body alterations that can be involved.

I really like this Spock, don’t get me wrong, but I’m finding his increasing “humanness” a bit distracting. I mean, making a joke in court? That was a bit far-fetched.
I’ve always considered time travel to be something of a plot cheat code so such episodes aren’t often favourites. But that said we’ve been watching Enterprise lately and recently got to S03E11 “Carpenter Street” and it had some good moments.
Top of mind is Archer driving a truck and T’Pol exclaiming “Turn Starboard at the next street!”
Incidentally I’ll never understand how they could possibly think taking an alien back in time to Earth is a good idea. T’Pol is the second last crew member that should have been on that mission (just slightly ahead of Phlox)
